Chicken, chicken legs and steaks go over live charcoal. No shortcuts, no flat-top stand-ins. The fire is lit before the doors open at 5:00pm and it stays hot until 10:30pm.
High heat gives you crisp skin and a hard sear, and it keeps the inside juicy. Steaks are cut thick, seared hard, then rested and sliced. Chicken legs are grilled until the skin blisters.
Shawarma is spiced, stacked and carved to order, then wrapped hot. Burgers are built to order and stacked tall. Fresh juices are pressed glass by glass, cold and bright.
